Dear Henderson:
If preparing sushi for a buffet-style
party, how long can it be left out before becoming suspect? Do you have
any tips to extend longevity?

Dear Buffet Host,
For any kind of buffet gathering
utilizing our frozen sushi:
- For a small buffet, you may
arrange the frozen sushi pieces directly on the serving platter,
cover with plastic wrap, and allow to thaw at room temperature for
1-2 hours (this will depend on your room temperature. When
completely thawed, cool to the touch (not cold), you may serve
immediately or refrigerate until ready to serve.
- For larger parties, thaw
larger quantities at the same time (keep thawed backup amounts
covered in the refrigerator), or thaw in the microwave as per
instructions as needed, and refresh your serving platter throughout
the serving period.
- The sushi can be left out
at room temperature (70°F) for up to 2 hours, but like any small
appetizer such as (cheese cubes and cold cuts), the may be
susceptible to air drying after awhile, if not covered.
