By properly freezing fresh
sushi, the flavor and texture is preserved. When freezing sushi
it is important to freeze the product quickly and at very low
temperatures. This can be done by using flash freezing as
opposed to passive freezing, where it just sits on a frozen
shelf and freezes gradually. Why is this important? When blast
freezing, smaller ice crystals are formed, therefore there is
less cell damage. This is evidenced by less shrinkage, less
loss of water ("puddling") upon complete thawing. The rice is
soft, sticky and moist as in fresh products. Less cell damage
also means, colors of the ingredients are also preserved (i.e.
green vegetables, like avocados or spinach, retain there green
color), the seafood retains its tender texture, and doesn’t
become fishy, dry and chewy. Similar to when fisherman throw
their catches directly on ice to preserve the fish, our sushi is
quickly frozen soon after it is made, to preserve its fresh
taste and texture, resulting in an end product which is not
possible with conventional freezing.
In order to make great sushi,
attention to detail is crucial. All of Banzai’s sushi is hand
rolled, and the 49 standard varieties and countless custom
varieties guarantee all individuals’ tastes can be satisfied.
Special attention is also paid to the temperature of the sushi
at every stage of production in order to ensure the quality of
every piece. Sushi is shipped with dry ice in orders of less
than 200 pieces and temperature recorders on large commercial
freight orders to make certain that all parties receive their
